What are holubtsi? Holubtsi are traditional Ukrainian cabbage rolls stuffed with rice and meat or vegetables, usually served in a tomato sauce. They can be cooked on the stove top or baked in the oven. Fillings and sauces, and even their name, can vary from region to region.
